Abstract

The aim of the paper is to present selected problems connected with the food traceability system. The system, introduced by the Regulation (EC) No 178/2002 of the European Parliament and of the Council, is intended to prevent irregularities in the food-nourishment chain. The paper describes the functioning of the system, illustrates the principle of its action, and presents the technological solutions applied in the food traceability system. The traceability issue was discussed in the context of legal regulations. The system is a technical tool supporting the entrepreneurships in achieving their goals. It is useful when the need arises to determine product history or localize a product or components used in its manufacturing.

Quality management systems, introduced food law, and control institutions are the elements ensuring food safety. They are inadequate, however, since no system can provide food safety without ethics and responsibility.
